Crack-Like Kale

Serves 3-4 as side dish
1 bunch kale
Extra virgin olive oil
Sea salt
Optional extras: soy sauce, garlic powder, chili powder
Preheat the oven to 250 degrees.
Tear kale leaves from thick stems; discard stems. Rinse and dry the kale. Place on a baking sheet and drizzle with xv olive and a little sea salt. Toss to combine with hands. Bake in oven for 25 minutes, or until kale reaches desired crispiness, tossing halfway through.
Cook’s notes:
- Kale will shrink with cooking and concentrate its flavor, so go light on the salt to start. You can always add more at the end.
- Serve with a Cubano Pork Sandwich.

Absolutely delish! Made a whole batch that lasted for approximately 10 minutes on the table. It was incredibly easy and was a good balance of “healthy greens” and “snack food.”

This stuff is heavenly – almost convinced my husband they were potato chips; I cook mine for 15 minutes at 350 – that works well too. Bought three different kinds yesterday at the Coronado Farmers Market.
