Easy Pork Loin

Serves 2-3
3 garlic cloves
1 tablespoon each fresh rosemary, sage, and thyme
1 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper
1 1-lb pork tenderloin
Extra virgin olive oil
1/4 cup bread crumbs (optional)
Preheat the oven to 500 degrees.
Place the garlic, herbs, salt, and pepper on a cutting board and chop into a paste-like consistency.
Place the pork loin in a roasting pan and make 1- inch cuts into the pork loin, 3 to 4 cuts on each side. Rub the pork loin with olive oil and then rub the loin with the garlic/herb paste, filling the cuts.
Optional: On a separate plate, roll the loin in the bread crumbs and return it to the roasting pan.
Bake for 7-8 minutes in the oven until a crust forms. Turn the roast over and reduce the heat to 350 degrees. Bake for 15-20 minutes, or until the internal temperature reaches 160 degrees.
Remove the roast from the oven and cover with aluminum foil and let rest for 10 minutes.
Cook’s notes:
- If you want to make a bigger loin, multiply the ingredients and cooking time (2 lbs=15 minutes at 500 degrees, and then 30 minutes at 350 degrees, etc.)
- Feel free to experiment and add other ingredients you prefer, like cayenne or chili powder, or other herbs and seasonings.
