Béchamel Sauce
If you’ve never made Béchamel sauce it might seem daunting, but it’s actually quite easy. Butter, flour, milk,
and seasonings–that’s it!

Mornay Sauce
Essentially, Mornay sauce is a Béchamel sauce with the addition of grated cheese, usually half parmigiano reggiano and half Gruyère. It is great as a creamy gratin topping for vegetables, like cauliflower or fennel.

Risotto
This is the recipe for a basic Parmesan risotto. From here, one can add a variety of things: mushrooms, asparagus, gorgonzola, saffron, shrimp, squash… I like to make this recipe and add some minced rosemary and a tablespoon of lemon zest to go with grilled lamb chops.
