4 stalks of celery, cut into 1/4″ slices on the bias
3/4 apple, cut into thick matchsticks
2 oz white cheddar cheese, cut into thick matchsticks
1 tablespoon sour cream
1 tablespoon extra virgin olive oil
1 tablespoon whole grain mustard
1 teaspoon cider vinegar
1 teaspoon chopped tarragon or other desired herb
Combine the celery, apple, and cheese in a bowl.
In a separate bowl, beat the remaining ingredients with a fork to incorporate.
Pour dressing on the celery mixture and serve.
