Salad greens for 4, rinsed and dried
1/2 lb Stilton cheese, or blue cheese of choice, cut into bite-size pieces
3/4 cup walnuts
1 Ambrosia or similar apple, sliced into bite-size pieces*
1/2 cup extra virgin olive oil 
1/4 cup white wine vinegar
1 teaspoon Dijon mustard
Sea salt  and freshly cracked pepper
*The apple can be substituted with a pear, if desired.
In a small nonstick pan, toast the walnuts over medium-low heat. Set aside to cool.
In a dressing bottle (or a container you can seal), combine the oil, vinegar, mustard, salt, and pepper. Shake vigorously to thicken.
Combine lettuce, cheese, walnuts, and apple in a salad bowl. Add dressing and mix to combine. Divide among four plates.
