Serves 3-4 as side dish

1 bunch kale
Extra virgin olive oil
Sea salt

Optional extras: soy sauce, garlic powder, chili powder

Preheat the oven to 250 degrees.

Tear kale leaves from thick stems; discard stems. Rinse and dry the kale. Place on a baking sheet and drizzle with xv olive and a little sea salt. Toss to combine with hands. Bake in oven for 25 minutes, or until kale reaches desired crispiness, tossing halfway through.

Cook’s notes:

  • Kale will shrink with cooking and concentrate its flavor, so go light on the salt to start. You can always add more at the end.
  • Serve with a Cubano Pork Sandwich.
