I’ll admit I’ve never been a big fan of sun-dried tomatoes, but these blew me away. The bright red tomatoes—dried in the sun and given a flavorful steeping in extra virgin olive oil, wine vinegar, garlic, oregano, capers, and red pepper flakes—are simply packed with flavor. What’s more, they have a profound sweetness I haven’t tasted in other sun-dried tomatoes. Italians say that by drying the tomatoes in the sun the flavor is concentrated and the sweetness is intensified—and they certainly seem to be right about this one!
